Petroselinum comes from the Greek words petros meaning rock because it grows well on dry rocky soils and selinum meaning celery. It was associated with deaths and funerals. Parsley acts as a stimulant on the menstrual process and is a diuretic - helping the body get rid of excess water. Rich in vitamin C, iron, iodine and magnesium it should be included in many dishes - add towards the end of cooking time to preserve vitamin content and colour.
