A perennial herb with edible sky blue flowers, chicory is used as a both a culinary and medicinal plant. The roasted powdered roots have a long history of being used as a coffee substitute giving a bitter caramel flavour. The leaves and flowers can be used in salads or made into a tea that is good for the liver and increases the flow of bile. Carrying chicory was once thought to remove obstacles that crop up in life and chicory harvested in perfect silence with a gold knife, midsummer at either noon or midnight, to make the possessor invisible.
