Melting feta with rosemary and lemon thyme.

A delicious quick and easy sharing dish -  perfect as an appetizer or simply to serve with with drinks.

Ingredients

 

200g packet Greek Feta cheese
Olive or rapeseed oil
Ground black pepper
5 sprigs lemon thyme
2 sprigs rosemary
Pinch dried chilli flakes
Squeeze lemon juice

Method

Cover a tray with silver foil or a silicone sheet
Drizzle oil into the centre of the sheet, on an area larger than the block of feta
Sprinkle some black pepper, chilli flakes and torn off leaves of thyme and rosemary on to the oil.
Place the feta on the oil and cut the block in half (leave it looking whole, don’t separate the halves).
Add more pepper, chilli, rosemary and thyme to the top and squeeze over the lemon juice.
Put into a hot oven for 5-10 mins – or onto a bbq until the cheese is golden and soft.
Eat straight away before the cheese cools by dipping pieces of bread or vegetables into it fondue style.
