The best known of all garnishing herbs, parsley contains a good range of vitamins plus iron, calcium, magnesium and potassium. It has been grown for over two thousand years, but initially as a medicinal herb before being consumed as food. The shiny flat leaves of popular herb are delicious and nutritious.

Parsley is a biennial and puts on plenty of leaf in the first year, before flowering and dying in the second year. If you have it growing in the ground, don't pull it out when it flowers as it readily self-seeds and before long you will have a lovely clump. I have seen parsley growing well in both full sun and more shaded positions, it isn't too fussy in aspect, but it does like to have a well drained fertile soil. Parsley grows successfully in pots too, but it is important not to transfer it into pots that are too big, a good rule of thumb is about four centimetres larger until the roots come through the bottom and then pot on again.
