Probably the most popular savory in Europe for culinary purposes, it contains a large variety of essential oils which give it a characteristic aroma and flavour similar to oregano or thyme. It has been used as a culinary herb for many centuries, the peppery leaves used liberally for flavouring, particularly beans and meats. As a tender annual it doesn’t have many months to grow in the UK and can be used fresh or dried (when in flower) so it can be used year round.
